Quinoa Hippie Muffins

good for breakfast or snacktime.

1 cup cooked quinoa
2 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 cup oil / applesauce
3/4 cup or less maple syrup
3/4 cup milk*
1 egg
1 teaspoon vanilla
to add yum factor to these fairly tame muffins add chopped up apple, banana, berries if you like. i'm sure walnuts would be good too.

* i use almond milk

preheat oven to 350F
get handy child to put muffin cups in muffin pan
mix dry ingredients in one bowl.
mix wet ingredients in another bowl.
wet into dry.
bake for 25-30 mins.
